Chocolate Chia Protein Muffins

Issue: I have really good chocolate casein protein powder that I love but never use AND I also want cake!

Solution: Make muffins with protein powder, top with some almond butter and problem solved.

Oh how I wish life was that easy!! Fortunately, In this case it is 🍰


-3/4 cup almond flour
-2 tbsp coconut flour
-2 tbsp chia seeds
-1 cup protein powder
-1 tea baking powder
-pinch sea salt
-1 large mashed banana
-1/2 tea vanilla
-1 egg
-1 tbsp melted coconut oil
-1/2 to 1 cup unsweetened almond milk (add till mixture turns into batter consistency)
– add a few stevia drops if you like extra sweetness

Bake at 350 about 20 minutes

Top with: almond butter OR
Protein frosting: mix chocolate pb2, protein powder and water (individual servings will be about 1/2 tbsp of each)
OR eat them as is 😉 that’s usually what I end up doing my life is busy right now!!!

This is the protein I used. Be creative and use what you have!!!
