Stuffed Butternut squash with quinoa

Yep this is a good one! It’s pretty simple for looking so fancy.

– 1 butternut squash
– 1 red bell pepper diced
– extra virgin olive oil
– 1 tea dried oregano
– 1 cup white quinoa (already prepared)
– 1/4 cup feta
– small grated carrot
– juice from 1/2 lemon
– 1 red pepper chopped
– small can pitted black olives
– 2 spring onions (green onions)


1. Half the squash and scoop out seeds. Then score the flesh with a knife
2. Drizzle a little olive oil on top of squash flesh, rub it in and season with ground black pepper, sea salt, and oregano
3. Bake @400 for 40 minutes
4. Take out and add the chopped red peppers on the tray, cook 10 more minutes
5. Mix the rest of ingredients for stuffing in a bowl: quinoa, feta, olives, carrot, lemon juice
6. Take out and add red peppers to mix with stuffing
7. Add stuffing to squash
8. Bake 10 more minutes
