First half 2 peppers, core them and place on baking sheet. Bake for about 30 minutes @250
To make stuffing:
quinoa already prepared
1. Sautéd 2 crushed garlic cloves and 1/4 diced yellow onion on medium heat until onion is translucent
2. Then add 1.5 cups quinoa and 1/2 cup shredded carrot . Cook on low 5 more minutes
3. Set mixture aside in a mixing bowl and let cool
4. Stir in 1/2 cup feta and stuff the peppers
That’s it! I’m going to play with this recipe and try adding shredded chicken and I think it would be good with avocado!!
